Italian Baked Chicken & Polenta (Organic & Gluten-Free)

Serves 2 ~ Prep: 5 min ~ Cook: 25 min ~ Ready in 30 min

  • Ready-to-use polenta (I used "Pacific" Organic Polenta, roasted garlic & herb
  • Organic Parmesan Cheese, grated
  • 2 Boneless organic chicken breast fillets
  • 1 can "Muir Glen Fire Roasted Diced Tomatoes", drained and rinsed
  • Rosemary sprigs or dried rosemary
  • 1 garlic clove, sliced
  • 2 tbsp olive oil
  1. Heat oven to 375 degrees.  Cut up the polenta into small chunks and scatter in the bottom of a small roasting pan.  Sprinkle with parmesan cheese and cover with the tomatoes.  Sit the chicken breasts on top and sprinkle/add rosemary and garlic on top.  Drizzle with olive oil, then season to taste.
  2. Roast for 25 mins or until the chicken is cooked through
