Italian Baked Chicken & Polenta (Organic & Gluten-Free)

- Heat oven to 375 degrees. Cut up the polenta into small chunks and scatter in the bottom of a small roasting pan. Sprinkle with parmesan cheese and cover with the tomatoes. Sit the chicken breasts on top and sprinkle/add rosemary and garlic on top. Drizzle with olive oil, then season to taste.
- Roast for 25 mins or until the chicken is cooked through
